Now, I can't explain exactly what made me want to make Liver, but I made some tonight. It's super easy, packed full of protein, and tastes good, although I have a hard time eating more than a little bit. Also, it's really cheap. Give it a shot and see if you like it. The entire recipe makes enough for at least a half-dozen people and couldn't have cost more than about $3.
1 lb. of Beef Liver ($1.99/lb. at Central Market)
1 Medium Onion (~$0.50)
~2 tbsp Butter (~$0.25)
2 Hard Boiled Eggs (~$0.35)
Salt and Pepper to Taste
Sautee the Liver and Onion in Butter. Salt and Pepper to taste. Pulverize in the food processor with the two Eggs. Enjoy on Pumpernickel Bread, Crackers, or whatever else you can think of!
