Tacos. mmm... Tacos.

Sometimes I take a look at my life and say "what the freaking crap are you doing?" and then I call my friend and he tells me I need to take a chance and then I continue sipping beer and cooking and here's what I come up with:

Take the pork roast that you've cooked in your Crock Pot for the entire day (7:00am when you left for school, until 6 something when you return) and put it on flour tortillas (because you're feeling decadent) with Goya beans that you've heated on the stove, avocado slices, queso fresco, sour cream, cilantro, and maybe a little bit of homemade salsa. How do you make homemade salsa, you ask? Follow this recipe:


1 Tomato
1 Tomatillo
Big ol' Bunch of Cilantro
1 - 00 (that's the infinity sign if you couldn't tell. n00b) Jalapenos
3 Cloves Garlic
1/4 Onion
Dash of Cumin
Lime Juice

Put everything in mini-food processor and enjoy the shit out of this dip.

Wait! Don't forget to take some of the remaining pork the next day, pull it apart and mix with BBQ sauce and eat on a Kaiser roll.
